having visited many of the wineries on our list, we take pride in using independent wine merchants, and have created a blend of tried and tested classic varietals and regions, alongside some of our favourite new and unique expressions we think you’ll enjoy.

all cocktails at ajé are playful, seasonal and made with the same attention to detail as our food. from familiar classics with a twist, all are original creations, the list changes with the seasons and makes use of local ingredients wherever we can.

tabanco
tabanco ajé is our little corner for wine, sherry, tapas and good conversation. tucked away from the main restaurant, with a separate entrance and menu, it's a more relaxed, informal space for sharing plates, discovering new bottles and settling in for the evening
